  • 125g konjac flour.
  • 2 tablespoons ginger, grated.
  • 2 apples, sliced into thin pieces (Yukon or Ben Davis).
  • 100g raisins (soaked for about 10 minutes in hot water). 
  • 1 pinch of salt.
  • 1/2 teaspoon ground white pepper.
  • 3 tablespoons of sweet soy sauce.
  • 1 tablespoon vinegar.
  • 2 teaspoons of granulated sugar.
  • 2 tablespoons minced garlic.
  • 4 tablespoons of canola oil.
  • 1 cup of water.
  • 1 teaspoon of rice vinegar.
  • 1/2 teaspoon of sesame oil.

Cooking Methods

Step 1: Prepare and wash your rice. Put your short grain sweet rice into a large bowl, and fill with water 2 inches above the rice. Soak it for about 30 minutes. Then, wash it again with water until the water is clear. 

Step 2: Flour-Coat your rice and fry it. Mix your konjac flour with salt and pepper in a large bowl using a spatula. Add some of the flour in at once, and don’t add too much at once if you don’t want your flour to form clumps. After the flour is mixed well with the salt and pepper, add rice and keep stirring until it is fully coated in the flour mixture. 

Step 3: Add your fried rice to a pan, cover it with a lid, and bake it. Bake at medium heat for about 15 minutes or until your rice becomes sticky but not too much so that it starts to burn. Make sure you mix your rice well with your hands so that none of the grains stick together. After 20 minutes, add the ginger and garlic to your rice. Continue to bake for an additional 5 minutes.

Step 4: Rinse your rice with water again and drain it. 

Step 5: Add your canola oil and sweet soy sauce to a large bowl along with vinegar, sugar, sesame oil, and minced garlic, then mix them using a fork or spatula until well mixed. Add your rice to the sauce mixture, stir them together, then add water to cover up all your rice. 

Step 6: Steam on medium heat for about 20 minutes, and make sure that you stir it now and then.
