  • 1/4 teaspoon pure vanilla extract (optional)
  • 1/3 cup of fresh or frozen mango
  • 1 tablespoon of honey (optional)


1. Place the cashew pieces and water into a Vitamix container. Secure lid and run on the highest speed for 1 to 2 minutes until smooth. Do this in three separate batches.

2. Transfer the cashew mixture to a fine mesh strainer over a large bowl and use the back of your spoon to press against all the solids that have fallen through your strainer. This will extract the maximum amount of juice out of your cashews.

3. Discard all the liquid in the bowl and put the cashew paste in another bowl. Add the lemon juice and stir well to combine.

4. Add vanilla, mango, honey, and ice cubes, if desired, into a blender and blend until smooth. Pour this mixture into a glass or directly into your mouth! (I like doing both).
